Spaghetti Sauce

Ingredients:

  • 1-lb. ground beef or ground turkey
  • 1-lb. Spicy Italian sausage
  • 1 small onion, finely chopped
  • A lot (5-6) - cloves garlic, minced
  • 1 (28 oz.) can whole tomatoes
  • 2 (15 oz.) can tomato sauce
  • 1 (6-oz.) can tomato paste
  • 1 tsp. oregano
  • 1 tsp.  sugar
  • pinch of crushed red pepper
  • 1 tsp. Onion powder
  • 1 tsp. Garlic powder
  • 1/2 tsp. Pepper
  • Pinch of salt 
  • 1 tsp. Italian seasoning 
  • 1 tsp. Parsley

Instructions:

  • Brown ground beef, sausage, onion, and garlic.
  • Add tomatoes, paste, sauce, and seasoning. 
  • Simmer at least 1 hour.
  • Use with pasta, mostocholi, lasagne, or whatever you like!

Ingredients:

  • Homemade or jar spaghetti sauce (see spaghetti sauce for recipe)
  • 1 (8-oz.) pkg. lasagna noodles
  • 1 (4-oz.) Parmesan cheese
  • 2 (8-oz.) shredded mozzarella cheese
  • 1 (15-oz.) ricotta cheese
  • 1 tsp. Parsley
  • Salt & pepper

Instructions:

  • In a bowl, combine the cheeses together (best if mixed by hand). Add some dried parsley, salt, and pepper.
  • grab your spaghetti sauce - homemade or jar
  • Place a little sauce on the bottom of a baking dish, then noodles, sauce, and cheese. Repeat this process until the dish is full, ending with cheese on top. 
  • Bake at 350°, covered, for 1 hour.
  • Broil at the end for about 5 minutes if you want the cheese a bit browned.

Toasted Angel Hair with Sausage and Peppers

Ingredients:

  • 1 Pound Italian Sausage
  • 3 Medium Bell Peppers
  • 16 Ounces Uncooked Angel Hair Pasta
  • 4 Cloves Garlic, Minced or Pressed
  • 5 1/4 Cups Chicken Broth
  • 1 ounce Parmesan Cheese
  • 1 cup Dried or Fresh Basil

Instructions:

  • Place sausage into large skillet and cook until no longer pink. Make sure to break it into small pieces. Remove from skillet when finished.
  • While sausage is cooking, dice the bell peppers after removing the seeds.
  • Add the angel hair to the skillet and toast for 8 to 10 minutes, or until it’s a golden brown color. Add garlic. Turn it every 2 minutes to prevent burning.
  • Once the pasta is toasted, add the broth, peppers, and sausage to the pan.
  • Bring to a boil, cover, and allow to simmer vigorously for 5 to 6 minutes, or until the pasta is tender.
  • Once done, remove from heat and stir in basil, top with parmesan cheese. Enjoy.

Creamy Lemon Chicken Pasta

Ingredients:

  • 2 chicken breasts, cut into small pieces or strips
  • Seasonings of your choice
  • 2 tbsp oil
  • 1 tbsp butter
  • 1 tbsp minced garlic
  • 1 tbsp flour
  • 2 cups white wine or chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Parmesan (or more!)
  • Juice and zest of 1 lemon
  • Pasta of choice
  • Dried parsley

Instructions:

  • Season and cut your chicken.
  • Cook in a skillet on medium to high heat with 1 tbsp of olive oil until done.
  • Remove chicken from skillet.
  • We want to save the browned bits on the pan from the chicken.
  • Add 1 tbsp of olive oil and 1 tbsp of butter to the skillet
  • Add 1 tbsp of minced garlic and cook for a few minutes.
  • Add 1 tbsp of flour and cook for 1 minute.
  • Add white wine (use chicken broth as a substitute).
  • Deglaze the pan.
  • Add heavy cream and stir together.
  • Add cheese, the juice of one lemon, and zest.
  • Let cook down until thickened.
  • Add cooked pasta and top with the chicken! Sprinkle with parsley and red pepper flakes for added heat!
