Veggie Cornbread Muffins

Ingredients:

  • 1 Cup Cornmeal
  • 1 Cup Flour
  • 1/4 Cup Sugar
  • 1 Tbsp. Baking Powder
  • 1 tsp. Salt
  • 1/4 Cup Vegetable Oil
  • 1 Egg
  • 1 Cup Buttermilk
  • 1/2 Red Pepper (chopped)
  • 1 Jalapeno (chopped)
  • 1 Cup Shredded Cheddar Cheese

Instructions:

  • Preheat oven to 350 degrees F. Spray muffin tin with cooking spray.
  • In a large bowl, mix together dry ingredients.
  • In a separate bowl, combine wet ingredients.
  • Mix the wet ingredients with the dry ingredients.
  • Gently fold in vegetables and cheese.
  • Fill the muffin tins almost to the top.
  • Bake for 18-20 minutes or until a toothpick inserted in the center comes back clean.
  • Serve warm and enjoy!

Beer Bread

Ingredients:

  • 3 cups flour (sifted)
  • 3 teaspoons baking powder (omit if using Self-Rising Flour)
  • 1 teaspoon salt (omit if using Self-Rising Flour)
  • 1/4 cup sugar
  • 1 (12 ounce) can beer
  • 1/2 cup melted butter (1/4 cup will do just fine)

Instructions:

  • Preheat oven to 375 degrees.
  • Mix dry ingredients and beer.
  • Pour into a greased loaf pan.
  • Pour melted butter over mixture.
  • Bake 1 hour, remove from pan and cool for at least 15 minutes.

Cornbread

Ingredients:

  • 1 Cup Cornmeal
  • 1 Cup Flour
  • 2/3 Cup Sugar
  • 1 1/2 tsp. Baking Powder
  • 1 tsp. Salt
  • 1/3 cup melted butter
  • 1 Egg
  • 1 Cup milk

Instructions:

  • Preheat oven to 400 degrees F. Grease a 9-inch round cake pan or square baking dish.
  • In a large bowl, mix together dry ingredients.
  • In a separate bowl, combine wet ingredients.
  • Mix the wet ingredients with the dry ingredients.
  • Pour batter into pan.
  • Bake 25 minutes until the top is golden brown.
  • Serve warm and enjoy!

Shallot & Roated Garlic Bread

Ingredients:

  • Itailian bread
  • Shallots
  • Garlic
  • 1/2 cup butter
  • 1/2 tsp. chili flakes
  • Parsley
  • Salt & pepper
  • Cheese - Mozzarella and parmesan

Instructions:

  • Roast garlic and shallots on 350 for 1 hour and 15 minutes.
  • In a bowl, squeeze out garlic and shallot. 
  • Add butter and seasonings.
  • Slice bread in half.
  • Spread the butter mixture over the bread
  • Top with cheese
  • Bake uncovered at 350 degrees for 15-20 minutes.
  • Once golden and crunchy, slice and serve.

Bisquits

Ingredients:

  • 2 cups flour
  • 1 1/2 Tbsp baking powder
  • 1 tsp. sugar
  • 1/2 cup salted butter
  • 1 cup half and half
  • 1/2 Tbsp melted butter to brush on top

Instructions:

  • Dice butter into small cubes and keep cold
  • In a large bowl - mix flour, baking powder, and sugar.
  • Add diced cold butter and cut into flour mixture.
  • Add half and half. Do not over mix
  • Place dough on a floured surface.
  • Fold dough in half and pat into a rectangle. 
  • Cut dough with a circle cup. This should make around 8-10 bisquits
  • Place bisquits on a cookie sheet lined with parchment paper. 
  • Bake at 450 degrees for 12-15 minutes.
  • Once done, brush with melted butter.
  • Serve warm and enjoy!
